About Trifecta Coffee Company
From a garage to Montaño Road
Our story
In 2007 Thomas Isole left a 25-year career in high tech to chase a different kind of precision: roasting coffee. He started in his garage.
From 2008 to 2015 he roasted in the East Mountains as Fat Boy Coffee Roasters, batch by batch, learning how each origin wanted to be roasted and building a following one bag at a time.
In April 2015 he took an empty space on Montaño Road and renovated and built it out into Trifecta Coffee Company, named for a winning combination of three things done well: roasting, a coffee bar known for its one-of-a-kind “Shaken-not-Stirred” drinks, and from-scratch baking.
It took many years to get from those early batches in a garage to a shop where almost everything is made from scratch: coffee roasted on the premises, syrups, sauces and spices made in house, and a bakery case filled fresh every day.
Our staff is passionate about making your visit as enjoyable as possible, and your drink is made exactly the way you want it. That passion is catching: some of our staff started out as customers who loved what we do here.
the coffee
All coffee is roasted on the premises. The whole bean selection includes coffees from over 18 countries of origin and 5 growing regions worldwide. We commit 5 cents for every pound of green coffee purchased to an organization called The Coffee Trust. This organization works with coffee farmers and their families in the Ixil region of Guatemala. They provide help in this community of 1300 families. They engage with local problems spanning from agriculture, nutrition, and economic diversity. Trifecta holds two main fundraisers yearly on New years Day and National Coffee Day in support of the work done by The Coffee Trust.
We source our green coffee through three trusted importers: Vournas Coffee Trading, Cofinet and Santa Fe Coffee Works. Fair trade sets a minimum price for farmers; we aim higher than that. Our importers seek out coffees grown with tremendous care, and they pay farmers for quality, so a farmer’s income doesn’t rise and fall with the world coffee market price. For you, that means exceptional coffee at a fair price. For the farmer, it means a steady, rewarding living.

the drinks
When you select a coffee drink at our coffee-bar you will discover a wide variety of traditional and specialty beverages.
All the sauces and syrups we use are made in house. Each recipe is focused on taking your espresso drink to a completely new level. Ask about our “Shaken-not-Stirred and Stirred-not-Shaken menu.
Our baristas take the definition of “barista” literally as they continually incorporate bartender style cocktail recipes with espresso and coffee.
the bakery
We make from scratch a wide selection of sweet and savory items baked fresh daily and have 3 to 5 different scones, a variety of cookies, granola bars, steel cut oatmeal, a classic coffee cake, meat and veggie quiches and breakfast turnovers. In addition you will find specialty cakes and pies along with a wide selection of seasonal treats. Our menu continually changes day to day but we are certain there is something here for everyone.
Behind the bakery case is our pastry chef, Jennifer Gomez, a former instructor at Le Cordon Bleu with more than 20 years of professional baking experience. Every day starts early, with the freshest ingredients we can find and recipes made by hand, so that everything in the case is baked fresh that morning.
